1278. Fresh Blueberry Chocolate Mendiants


This is a very simple way to elevate two very simple ingredients into something classy and fancy. Mendiants are a French confisserie concoction of chocolate discs topped with nuts, dried fruit, and oftentimes glace fruits.
This is a much simpler and fresher take on this quick candy, using fresh blueberries. As with many things, this too is highly customizable from the type of berry/fruit to the type of chocolate you use. I obviously went down the blueberry/milk chocolate route, but raspberries would also have been a fine combination, or perhaps some semi-sweet chocolate to cut the overall sweetness.


Ingredients:

1 cup fresh blueberries
200g chocolate
flaked salt, to finish



Method:

Melt chocolate over intervals in the microwave or in a bain marie.
Spoon teaspoonfuls of the melted chocolate over a wax paper-lined baking sheet into small discs.
Place 4-5 blueberries per disc, then top with a generous drizzle of more melted chocolate to bind the lot. Sprinkle lightly with flaked salt.
Refrigerate until solid. Place on your serving dish while still sold from the refrigerator; serve at room temperature.
