1378. Chocolate Crinkle Cookies


These chocolate crinkle cookies are sold at a famous bakery for about a dollar and a half per cookie. The recipe allows you to make 24 cookies for the price of two. The cookies are chocolate cookies coated in powdered sugar. When they bake, they crack, revealing the chocolate interior.
They are chewy and ever-so-slightly gooey. They are also a great recipe to include kids in the final stage of rolling the balls in powdered sugar. So rewarding to have them for tea time, showing kids the process of work paying off sweetly.



Ingredients: makes 24

1/2 cup cocoa
1 cup fine sugar
2 eggs
1 tsp vanilla
1 cup flour
1 tsp baking powder
pinch salt
1/2 cup oil
1/2 cup powdered sugar, to coat



Method:

Whisk together in a bowl the flour, baking powder, and salt; set aside.
In another bowl, whisk together the cocoa, sugar, and oil.
Add the eggs and vanilla one by one to the cocoa, mixing well after each addition.
Whisk in the flour mixture until incorporated.
Cover the bowl and refrigerate 30 minutes.
Preheat oven to 330F.
Roll the dough into 24 one-inch balls, then roll each ball in powdered sugar.
Set well-spaced on a non-stick baking sheet and bake for 10-12 minutes.
Allow to cool completely on the baking sheet before removing.
