1381. Mushroom Spring Onion Soup


Notwithstanding water, this is a five ingredients soup highlighting fresh cremini mushroom and spring onion. It packs plenty of flavor beyond the sum of its parts.
Great recipe for the fasting days of Ramadan when the tummy seeks something warm and nutritious.



Ingredients:

1 cup chopped spring onion
2 cubes chicken broth
3 Tbsp butter
500g fresh mushroom, fine chop
4 cups water
1/2 cup cream



Method:

In a pot, saute the chopped spring onion in the butter until tender.
Add the finely chopped mushroom and broth cubes and saute over high heat until the mushroom is cooked.
Add the water, bring to a boil, reduce heat and simmer for about 25 minutes.
Stir in the cream (do not boil after adding the cream), and taste to adjust seasoning with salt and pepper.
