Shakshouka is a Middle Easter and North African egg dish where the eggs are either scrambled with a tomato reduction or poached in it. This is a shortcut baked version, with no sauteeing, frying, or any stove top cooking at all.A jar or tomato sauce is used as the base in a single-portion sized cast iron skillet. The eggs are cracked on top, seasoned, laden with cheese (optional but great), and baked until the whites are set and the yolks are jammy. Warm bread on the side is a must.
Ingredients:
1/2 cup tomato sauce
2 eggs
salt and pepper
1/3 cup cheddar cheese, grated.
Method:
Spread the tomato sauce over the base of a six-inch cast iron pan (or any other similar capacity oven-proof dish). Crack the eggs on top and season with salt and pepper.
Sprinkle the grated cheese over the eggs.
Bake for 10-12 minutes in a preheated 350F oven until the whites are set and the yolk is jammy.
Serve with warm bread on the side.
