1564. Mini Cardamom Mastica Cakes {Machine}


I love my mini cake machine which can be adapted for almost any cake batter. Last time we made khanfaroosh, this time it's cardamom cakes. 
Instead of baking the cake, pretty bite-sized cakes are made directly in the molds of this machine.



Ingredients:

2 cups sugar
1 cup oil
4 eggs
1 tsp vanilla
2 tsp mastica paste
3 1/2 cups flour
2 tsp baking powder
2 tsp ground cardamom
a pinch of salt
1 cup milk




Method:

Process the sugar and the oil in the food processor for 2 minutes.
Add the eggs, mastica, and the vanilla, process for 2 to 3 more minutes.
Add the flour, baking powder, salt, and cardamom, process until just combined.
Add the cup of milk, and process until homogeneous, less than a minute.
Heat the cake machine in preparation to cook the cakes. Using a tissue, lightly wipe the insides of the molds with oil. Pour a tablespoon of batter into each mold, seal the machine, and wait for it to cook (about 4-5 minutes). Repeat for the remaining batter.
