Sweets for my sweet, honey for my honey. Or in this case, honey cake for my honey. Using a whole cup on honey, this lightly spiced cake has the honeycomb flavor loud and clear.
The making is a bit untraditional. All the dry ingredients are mixed. They all the liquid ingredients are also mixed separately, then pour in the liquid to the dry in one go, and ta-da.
Ingredients:
250g butter
1 1/2 cup brown sugar
1 cup honey
2 Tbsp water
3 cups flour
2 tsp baking powder
1 tsp cinnamon
1 tsp allspice
4 eggs
For the icing:
2 1/2 cups powder sugar
1/4 cup water
Method:
Preheat oven to 350F, butter and flour a bundt cake tin.
In a saucepan, put together the butter, sugar, honey, and water. Heat gently until the butter has melted and the sugar has dissolved. Remove from heat and cool 10 minutes.
In a bowl, mix the flour, baking powder, cinnamon, and allspice.
Pour in the cooled honey mixture and the beaten eggs. Stir just to combine and render smooth.
Pour better in prepared tin and bake for 50-55 minutes until a skewer comes out clean.
Transfer to a wire cooling rack and cool completely.
To making the icing, sift powdered sugar in a bowl. Stir in the water (you might not need all of it) to make a smooth and thick yet pourable icing. Spoon over the cooled cake and allow to set.
