This tomato bread is Spanish peasant food that has come into a new appreciation and is now considered a Spanish delicacy often served as tapas. Very simple to prepare, it can be made for one person or several.
Ingredients:
2 large, ripe beefsteak tomatoes
sourdough bread slices
extra-virgin olive oil
garlic cloves
Flaky sea salt
Method:
Pan fry a slice of sourdough in olive oil until golden on both sides.
Rub the bread with a raw garlic clove (halved).
Grate a tomato. Add a glug of olive oil and a generous pinch of salt. Taste and add more olive oil/salt if needed.
Spoon the tomato mixture on top of the bread and enjoy!
