1705. Shish Barak


I am affectionate towards yogurt-based dishes, and have no hesitancy in ordering sheesh barak at a restaurant. My hesitancy in making it however was due to the labor intensiveness in forming each little ravioli. Problem solved when I stumbled upon a $3 mold haphazardly the other day. 
Some choose to bake or fry their raviolis and pour the yogurt sauce over it just before serving; others choose to simmer the ravioli in the sauce like pasta and serve it.


Ingredients:

Meat stuffing:
2 onion, fine chope
500g minced meat
salt & pepper
1 tsp coriander powder
2 tsp 7-spice powder
1/3 cup pinenuts, toasted

Shish Barak Dough:
3 cups flour
1/2 tsp yeast
pinch of sugar
1 tsp salt
1 tsp baking powder
1/2 cup olive oil
1 cup warm water

Yogurt Sauce:
3 cups lebna (thick yogurt spread)
2-3 cups water
1 tsp salt
1 egg
1 Tbsp cornflour

Garlic Coriander Garnish:
50g butter
1 tsp grated garlic
1 tsp coriander powder
1/2 cup chopped fresh coriander


Method:

Cook all the meat stuffing ingredients together in a pot and set aside to cool before stuffing the ravioli.
Make the dough but combining all the ingredients in a food processor and whizz until homogenous and elastic. Set aside covered for 30 minutes before dividing into four balls.
To make the ravioli using the mold, roll one ball of the dough to cover the base. Fill each indent with the meat stuffing. Roll another portion of the dough and cover. Press firmly sealed using a rolling pin. Be sure to flour generously before you start and again before you roll sealed. Turn the mold upside down and extract the raviolis. Brush with oil and bake for 20 minutes at 375F.
To make the stew, put all the yogurt ingredients in a blender and blitz until combined. Pour into a pot and bring slowly to s simmer, stirring until thickened.
For the garnish, it is to be combined in a pan and cooked just before serving.
To serve, place the raviolis in the serving dish, or simmer them in the yogurt sauce. Add the yogurt sauce, and drizzle with the freshly infused garlic butter.
Serve immediately with a side of vermicelli rice.
