Almond butter is no longer a trend, but has become a well-established staple. It is a great alternative to peanut butter, and is generally considered healthier although the figures are not much different nutrition-wise. However, it is still sold at several times the price of a jar a peanut butter, so here is a quick and easy way to make your own, using powdered almonds.
By using powdered almonds, you cut down drastically on processing time. It also yields a much smoother butter than if you were using whole almonds. I still roast my powder almond before processing, for two reasons: first, taste; and second, the warmth from the roasting helps release the natural oils faster and we get a butter in no time.
Ingredients:
3 cups powdered almonds
pinch of sea salt
1 Tbsp olive oil, optional
Method:
Roast the powder almonds for 10 minutes at 350F. Pour it into a food processor, add the pinch of sea salt, and process until starting to clump. You may add a tablespoon of olive oil at this point to help the clump form a runny batter. Process more until the consistency of your liking. Pour the butter in a sterile jar and store 1 month on the counter, or several months refrigerated.
