1746. Salmon, Caviar, and Ricotta Open Face Sandwiches


This is a quick canape-style lunch for two, and follow loosely some broad guidelines and is not a traditional recipe. If you're like us, canapes any time will make your day, so why not make a lunch out of them.


For the Ricotta Tomato:
Chop a handful of cherry tomatoes and place in a bowl with a large pinch of salt and a generous drizzle of olive oil. Stir and let sit for a few minutes for the tomatoes to release their juices. Halve an english muffin and toast it. Spread each half generously with the freshest ricotta cheese and top with the marinated tomatoes.

For the Egg Caviar:
Halve an english muffin and toast it. Spread a thin layer of butter on each half, and salt it. Grate a cooled boiled egg on the fine holes and divide between the two bread halves. Top with a heaping teaspoon of caviar, and a squirt of fresh lemon juice.

For the Smoked Salmon:
Halve an english muffin and toast it. Spread a thin layer of butter on each half, and salt it. Place a single layer of very finely sliced onion. Add a layer a slice of smoked salmon. Top with chopped dill, some extra sliced onion, and a drizzle of fresh lemon juice.
