Caesar salad is always something we order when out, but rarely make at home, despite its simplicity. The classic caesar salad is composed of lettuce, croutons, that special dressing, and shaved parmesan. Making it at home allows us to customize it as desired.
Here, I am sharing only the recipe for the dressing, which is made in bulk and stored refrigerated. There are multiple uses for caesar salad dressing, besides a salad. Mashing some boiled eggs with it for a delicious sandwich filling, spreading it on toast and topping with tuna, or as a dip to some crudites are some options.
Ingredients:
1 cup freshly grated parmesan
1 cup mayonnaise
1 cup olive oil
1 Tbsp mustard
1 Tbsp apple cider vinegar
1 clove garlic
5 anchovies
Pinch salt and pepper
1 lemon. juice
1/2 cup warm water
Method:
Blend all ingredients in a blender, or whisk vigorously by hand.
Can be used immediately over salad or stored into an air tight jar in the fridge for later.
