In every sourdough journey, I think that it is inevitable to have extra discard. I do not like to throw it away, ever. This is a good and delicious way to use up the discard, and is only two ingredients.
The condition for this to work is that you need flat discard. If you use discard with a bit of activity, it will rise a bit, which honestly isn't bad either, just not crispy.
Ingredients:
1 cup FLAT sourdough discard
1 cup grated cheddar cheese
Salt and pepper to taste
Method:
Combine the ingredients together. Spread on parchment lined baking sheet.
Bake at 325F for about 20-30 mins.
*The trick: your start HAS to be FLAT. If there is any activity in it at all these won’t work properly. If you find there is any activity just add some water to thin it out. But flat from the fridge is best. Be sure to spread it very THIN on your parchment. And finally, the baking times will be dramatically different for every person because everyone’s discard will be different, so please watch these closely and either bake less time or more.
