1810. Cottage Cheese Scrambled Eggs


Cottage cheese has gotten a makeover. It used to be known as this 90's diet food, ultra bland and ultra boring. One of the most prominent makeovers is cottage cheese scrambled eggs, which just ups the protein so efficiently. 
Cook the eggs until just set; over-cooking will release too much water, which is fine but undesired. Some of the cheese curds get all melty and give you a small but satisfying cheese pull.



Ingredients: serves 2

4 large eggs
1/2 cup cottage cheese
salt and pepper
olive oil 


Method:

In a medium bowl, whisk the eggs, cottage cheese, salt and pepper to taste with a fork.
Heat a medium nonstick skillet over medium-low heat and spray with oil. When warm, pour the eggs in.
Using a rubber spatula, slowly scrape sections of eggs to the center of the pan as the bottom starts to set, creating soft folds for about 1 1/2 to 2 minutes total until just set.
Remove from the heat and serve.
