It is strange that pistachio is all the rage right now, because it is a classic ingredient that undeniably elevates any savory or sweet dish. Another undeniable fact is that a proper pistachio paste is a true pleasure and an indulgent luxury. This is used here is a very simple manner: as a lazy cake.
All a lazy cake is, is a mixture that has broken tea biscuits in it, shaped into a log and chilled. It is then sliced and served with some tea.
Ingredients:
1 cup whipping cream
1 cup pistachio cream
400g tea biscuits
1 tsp rose water (optional)
1/2 cup whole pistachios
Method:
Warm up the whipping cream and pour it over the pistachio cream in a large bowl.
Let it sit for 5 minutes, then add the rose water if using and whisk really well until smooth.
Break the biscuits apart by hand and add them to the pistachio cream. Give it a good mix, then transfer the mixture onto 2 overlapping pieces of plastic wrap. Shape it roughly into a log, then roll the plastic over and twist the sides to seal. Freeze overnight or minimum 4-6 hours.
Cut into slices and keep stored in the freezer until you’re ready to serve. Can be eaten straight from frozen.
