1931. Sheet Pan Shrimp Boil


This shrimp boil comes together in a single sheet pan and is a flavor-packed, filling meal. Combining potatoes, corn, andouille sausage, shrimp, and lemon slices, it’s easy to prepare and ready in under an hour. 


Ingredients:

1kg potatoes, large cubes
3 ears of corn, halved
400g andouille sausage, sliced
4 Tbsp olive oil, divided
2 Tbsp all purpose seasoning*, divided
500g large raw shrimp 
cloves garlic, minced
1 lemon, sliced into wedges

*All purpose seasoning: paprika, powder garlic, black pepper, salt



Method:

Preheat oven to 400F.
In a large bowl, toss potatoes cubes with 2 Tablespoons olive oil and 2 teaspoons seasoning. Spread them out on a large sheet pan and bake for 25 minutes.
While potatoes are baking, toss corn pieces and sliced sausage in the same bowl with another 1 Tablespoon olive oil and 2 teaspoons seasoning.
After potatoes have baked for 25 minutes, add corn and sausage to the sheet pan. Stir everything together to combine. Return pan to the oven and bake for another 15 minutes.
In the same bowl, toss shrimp with remaining 1 Tablespoon of olive oil, remaining 1 teaspoon seasoning, and minced garlic.
After the corn and sausage have baked for 15 minutes, add shrimp and lemon wedges to the sheet pan. Stir everything together again and spread it out evenly. Bake for another 10-15 minutes, or until the shrimp are pink and cooked through.
Remove the sheet pan from the oven. Garnish with chopped parsley, then serve.
