1933. Carmelized Onion Pasta


Similar to a roast chicken, a new pasta recipe is always welcome. This version cooks a load of onion, garlic, and mushroom in the oven until reduced and carmelized, before stirring in some dairy and the cooked pasta for a delicious meal.


Ingredients (Serves 6):

450g pasta 
3 large yellow onion 
3 heads garlic (top trimmed off)
600g mushrooms (thinly sliced)
3 Tbsp paprika 
3 Tbsp oregano 
6 Tbsp olive oil 
450g cream cheese (plain or herb-flavored) 
600ml heavy cream 
Salt and pepper — to taste



Method:

Preheat the oven to 350F.
In a baking dish, combine sliced onion and  mushrooms. Sprinkle with paprika, oregano, salt, and pepper. Place the garlic heads in the center, drizzle everything with olive oil, cover with foil, and bake for 20–25 minutes.
Meanwhile, cook the pasta al dente according to package instructions. Drain and set aside.
Remove the baking dish from the oven. Squeeze the soft roasted garlic from its skin into the dish. Add cream cheese and heavy cream, stirring until a smooth, creamy sauce forms.
Add the cooked pasta to the sauce, tossing to coat evenly.
Serve immediately, optionally garnished with fresh parsley or a sprinkle of Parmesan.
