Perhaps not necessarily French, but these crunchy oat and almond cookies are a staple in any French supermarket there. At home, you have the peace of mind and control of the ingredients going in. The finished products is delightfully crunchy. Recipe makes 10 cookies. Double as needed.
Ingredients: (10 cookies)
50g oat flakes
50g almond flour
70g whole wheat flour
45g sugar
1 tsp baking powder
Speculoos spices (1 tsp cinnamon + 1/2 tsp 4 spices: cinnamon, ginger, cloves, nutmeg)
45g oil
40g water
Method:
Mix the dry ingredients. Add the liquid ingredients and form a ball of dough. Shape 10 flat, rectangular cookies. Score lightly with a knife down the middle. Bake for 12-15 minutes at 350F. Let cool for 4-5 minutes in the oven, with the door open before removing to cool completely. Store in a tin for maximum crispness.
