According to wikipedia, tapenade is a Provençal dish consisting of puréed or finely chopped olives, capers, anchovies and olive oil. It is a popular food in the south of France, where it is generally eaten as an hors d’œuvre, spread on bread.
Sometimes it is also used to stuff fillets for a main course.
I decided to forgo the anchovies, because in my experience, anything containing anchovies is best eaten on the day it is made, otherwise if stored the flavor overwhelms the dish.
Ingredients:
1 cup black olives, sliced
2 tsp capers
2 cloves garlic
2 Tbsp parsley, chopped
1 tsp mustard
2 tsp lemon juice
salt & pepper
3 Tbsp olive oil
Method:
Place all ingredients in a mini-blender-chopper.
Pulse until fine consistency.
Use as an appetizer spread, or part of a recipe.
