I love the Ramadan special episodes Manal presents especially for this Holy Month!
On the second day of Ramadan, she presented these delicious and healthy stuffed whole fish baked in parchment paper parcels.
Since the fish are rather small (one per person), they take almost no time to cook.
Just for visual pleasure, at the end of cooking, the parchment is torn to reveal the surface for the fish which is the broiled to a golden and crispy effect.
Ingredients:
4 to 6 small whole fish, cleaned, scaled, gutted
1/2 cup parsley. chopped
1/2 cup coriander, chopped
1/2 cup celery, sliced
1/2 olives, halved
1 tomato, chopped
4 spring onion, chopped
4 Tbsp olive oil
1 1/2 tsp salt
1/4 tsp pepper
Method:
Preheat oven to 420°F.
Mix all the ingredients except for the fish in a bowl.
Make two or three slashes with a sharp knife on both sides of the fish.
Stuff the fish with the mixture.
Wrap the fish individually and securely in parchment paper.
Bake for 30 minutes.
Tear the parchment from the to and broil for a minute to make the skin crispy and golden.
Serve with your choice of accompaniments.
