Hand-sized food is fantastic.
Today we have a deep-dish pizza that fits right into your hand, that take no more than 10 minutes or less of hand-on time. If you use ready-made pizza dough, you will have these ready from beginning to end in no more than 20 minutes, and that includes baking time.
If you want to make your own pizza dough, its really really easy, and you can use the recipe for the thick crust pizza I've posted before.
I got the idea from one of Everyday Food's videos, but changed according to my liking.
You can play around with the ingredients too and stuff these pizzas with whatever you like.
Ingredients:
1 recipe pizza dough (rested for about an hour)
2 tomatoes, cubed
1 cup cubed mozzarella
12 tsp pesto
18 slices beef pepperoni
1/4 cup sliced olives
Method:
Preheat oven to 450°F.
Lightly brush 12 standard muffin cups with oil.
Divide the dough into 12 balls, fill each cup with one ball, gently pressing dough into bottom and sides of cup. Season with salt and pepper.
Sprinkle each dough cup with 1 tablespoon each tomato an cheese.
Add a teaspoon of pesto, then one and a half sliced pepperoni, a few slices of olives, and another tablespoon of cheese.
Bake until dough is golden brown and crisp, 12 minutes.
Let cool 2 minutes before removing from cups.
