I searched extensively for the right proportions of ingredients to make a good zaatar mix. I decided to go with that from Taste of Beirut.
The mixture consists purely of thyme for the herb department.
Several mixes I have come across also contain marjoram as well, and some also oregano.
As for the sesame, you can put toasted or non-toasted sesame seeds, but I personally prefer the depth and nuttiness of toasted sesame seeds.
Ingredients:
1/4 cup sesame seeds
1/3 cup sumac
2/3 cup dried thyme
1 tsp salt
Method:
Place the thyme, sumac, sesame seeds, and salt in a pan.
Heat gently, stirring all the while, until fragrant.
Place in a jar , cover, and set aside for up to a year.
Use mixed with olive oil as a simple spread over bread, or as otherwise indicated in a recipe.
