The result is a chewy cookie that, thanks to the rolled oats, will require a fair amount of chewing, and is chockful of natural fiber. No butter or oil, no eggs, no sugar, and if you read your oats label, no gluten either.
Ingredients: makes 8 cookies
2 ripe bananas
1 cup rolled oats
Optional add-ins:
chocolate chips
spices
dried fruit
nuts
Method:
Preheat oven to 350F.
Mash the bananas and stir in the rolled oats until well incorporated.
Drop by heaped teaspoons on a non-stick baking sheet to form eight cookies.
Bake for 15-18 minutes, until dry and the bottom is golden.
Let cool completely before consuming. Store in the refrigerator.
