This is a cookie reserved only for those who take coffee seriously. It packs a punch of coffee in the form of Turkkish ground coffee; unfiltered and undiluted. The touch of milk chocolate both slightly softens the punch and lends a layer of flavor and texture.
The cardamom is completely optional, but if you were looking for an edible Turkish coffee, it is a classic addition.
Ingredients:
1/2 cup butter, soft
1/3 cup sugar
1/4 tsp salt
1 cup flour
1 Tbsp finely ground Turkish coffee
1/2 tsp ground cardamom
200g milk chocolate
Method:
Set oven to 350F
Put the sugar in the bowl of a stand mixer and add the butter and salt. Mix together until combined. It doesn't have to be completely smooth.
Mix in the flour, cardamom, and ground coffee until the dough just comes together.
Pull the dough together with your hands and set on a floured surface. Roll out to about 1/4 inch.
Cut out the cookies using your preferred cookie cutter.
Transfer the cookies to a parchment lined baking sheet and bake for about 10 minutes.
Let cool slightly before transferring to a cooling rack to cool completely.
Melt the chocolate in a cup and dip half of each cooled cookie in the chocolate. Let the excess drip off. Set the cookies down on parchment paper to set the chocolate.
