Mini pizza calzones of sorts are made and fried to a golden fluffy perfection. By all means do not skip the freshly grated parmesan in the dough as that just tips it to perfection.
Ingredients:
For the Dough:
1 1/3 cup warm water
1 1/2 tsp yeast
2 tsp sugar
3 cups flour
1/4 cup fresh grated parmesan
1 tsp salt
1 tsp baking powder
2 Tbsp olive oil
For the assembly:
1 cup pizza sauce
1 cup shredded mozzarella
1/4 cup shredded fresh basil
oil for deep frying
Method:
In a beaker, whisk the yeast and sugar in the warm water; set aside.
In a food processor (or stand mixer with dough hook), combine the flour, freshly grated parmesan, salt, baking powder, and olive oil. Turn the machine on to combine, and as the machine is running drizzle in the yeast mixture.
Continue processing until you have a smooth elastic ball that does not stick to the sides of the bowl.
Put the ball in an oiled bowl, cover, and set aside for 1 hour until doubled in bulk.
Divide the dough into 12 balls. Flatten each portion and put some pizza sauce, shredded mozzarella, and freshly shredded basil leaves. Fold in half over the filling, sealing the sides well to avoid leakage whilst frying.
Deep fry in medium hot oil until puffed and golden all over.
Serve hot with a side of tomato sauce for dipping.
