1270. Brazilian Walnut Candy


These Brazillian walnut candies are know locally as camadeu de nozes. Of course it would consist largely of a can of sweetened condensed milk, a highly favored and essential ingredients in the Brazilian kitchen. In fact, without the fondant coating, this candy is simply sweetened condensed milk and finely chopped walnut cooked over the stove.
The home-made fondant-like coating is a bit more involved in the making, but not terrifyingly so. All you need is a bowl set over a pot of simmering water, powdered sugar, and a bit, just a bit, of liquid.


Ingredients:

200g walnuts, plus more to decorate
1 can sweet condensed milk
3 cups powdered sugar, sifted
About 1/4 cup milk
1 tsp lime juice



Method:

Finely chop the walnuts until almost ground.
Transfer the ground walnuts to a saucepan and add the sweet condensed milk, stirring until combined. Heat over medium-low and cook stirring constantly until thickened and releasing from the bottom of the pan when you run the spoon from side to side. This should take about 10 minutes.
Transfer to a greased plate, cover with plastic film and let it cool to room temperature, preferably overnight.
Use a little butter to grease your hands and take about a tablespoon of the mixture to form into an oval shape roll. Repeat with the remaining mixture and reserve.
In a double-boiler, combine the powdered sugar with the lime juice and start adding the milk, a little at a time, whisking firmly until the sugar has melted and you achieve a paste consistency. It should be thick and creamy and not runny, so you might not need all the milk.
Using a fork, dip each candy into the glaze, letting the excess drip off.
Transfer the glazed candy to a wire rack and decorate each with a walnut. Allow to dry completely before serving.

Note:Keep glaze in the double boiler at all times, or it will harden. If you find that the fondant glaze is getting too thick after a while, use some more milk to thin it out. If you find that it got too runny, you can add a bit more powder sugar to thicken it up.
The walnut candies will keep in the fridge for up to 5 days or frozen for a couple of months.
