1307. Buffalo Chicken Warm Sandwiches


A well-made warm sandwich is one of life's comforts. This buffalo chicken version uses a few shortcuts, and is good to keep in mind before you go on a grocery run. The list might go something like this: rotisserie chicken, ranch dressing, cheddar, and bread rolls. All other items are fairly standard pantry inhabitors.
Buffalo sauce is a Tex-Mex invention that is basically part hotsauce and part melted butter. Throw in a dash of worcestershire and you're golden. A bucketful of cheese is always a bonus, and the seasoned butter brushed over the assembled rolls just brings it all together.


Ingredients:

3 cups rotisserie chicken, shredded
1 package bread rolls
1/2 cup ranch dressing
1/2 cup hotsauce
2 Tbsp butter, melted
1 Tbsp worcestershire sauce
1/4 cup butter, melted extra
1/2 tsp salt
1 clove garlic, grated
1/2 tsp Italian herbs
2 cups cheddar cheese, grated



Method:

Preheat oven to 350° F.
In a small bowl, mix together the melted butter, garlic, salt, and Italian herbs. Set aside.
In a separate medium sized bowl, mix together the chicken, ranch, cheese, hotsauce, 2 tablespoons melted butter, and the worcestershire.
Split your rolls in half, place the bottom half in a prepared 9x13 baking dish.
Spread chicken mixture on bottom half of rolls.
Place the top half of the buns on top and brush the top of the rolls with the melted butter mixture.
Cover the dish with tinfoil and bake for 20 minutes.
Remove foil, and bake for an additional 5 minutes (or until the tops of the sliders turn a golden brown.
Remove from oven, slice and serve!
