This fried tomato for breakfast is a Palestinian on an Iraqi staple. I make my Iraqi version using only butter and salt with the tomato. This version is almost just as simple, but features gutsy and pungent Palestinian flavors: olive oil, garlic, and green chili.
You really don't need a recipe here, it is very straightforward. Fry the chili and sliced garlic in plenty of olive oil until blistered and fragrant. Add the chopped tomato, and cook down until almost mashed and partly carmelized.
Ingredients:
2 Tbsp olive oil
4 cloves garlic
1 green chili
3 tomatoes
salt
Method:
Fry the sliced garlic and whole green chili in a pan until blistered and fragrant.
Add the roughly chopped tomato and salt. Saute for a minute then cover and cook for about 10 minutes on medium. Uncover then stir to partially mash the softened tomatoes.
Adjust seasoning and serve with a side of bread.
