1355. Chicken Rice Casserole


This is one of those dishes that doesn't photograph well, but is well worth making. In short, it is a risotto-like baked casserole combining the wonderfulness of chicken, broccoli, rice, and cheese.
Layer it all in a deep baking dish and forget about if for about an hour. All that is required beyond is stir and eat. Great dish for meal prep too.


Ingredients:

For the chicken:
500g chicken breast
1/2 tsp dried thyme
1 tsp garlic powder
1/2 tsp pepper
1/2 tsp stock powder
1 Tbsp olive oil

For the rice:
2.5 cups chicken broth
2.5 cups milk
1 1/2 cups white rice
1/4 cup flour
1 tsp stock powder
2 cloves garlic minced
2 Tbsp butter
2 broccoli heads (large)
2 cups shredded cheese


Method:

Slide chicken into bite-sized, mix chicken ingredients; set aside.
Heat broth and milk until hot but don’t bring to boil.
Spread rice in deep oven dish, sprinkle with flour, then stock powder and garlic. Pour in broth-milk mixture, mix to dissolve flour, then add the rest of the liquid. Spread rice out across base of pan.
Top with broccoli florettes, then chicken then butter.
Bake uncovered at 375F for 40 min.
Check rice (before stirring) – should be just cooked. Then add half the cheese, stir well (get all the rice in corners).
Smooth top, sprinkle with remaining cheese, return to oven for 5 – 10 min just to melt. Sprinkle with green onion and serve immediately.
