It's all in the sauce. I have repurposed my fries seasoning for this dish, but a simple seasoning of salt and pepper will also yield good results. The sauce is a velvety smooth and very flavorsome lemon butter with a tinge of garlic that marries beautifully with the mild fish.
Serve this dish with the usual suspects: a huge leafy salad, sauteed broccoli, and/or crispy roast potato. A fantastic quick and delicious meal great for Summer or any time of year.
Ingredients:
500g salmon fillet, portioned
1 Tbsp fries seasoning
1 Tbsp oil
For the sauce:
1/4 cup lemon juice
50g butter, cold
1 small garlic, grated
Method:
Season the salmon fillets with the fries seasoning (or just salt and pepper).
Heat a large non-stick pan over high with oil. Place the fillets in the pan and reduce the heat to medium-low. Do not move the fillets. Allow them to cook for about 5-6 minutes or until well browned and cooked about halfway through. Turn the fillets and cook for about 5 more minutes, or until they reach the desired doneness.
Make the Sauce In a small saucepan, bring the lemon juice and grated garlic and salt and pepper to a boil. Reduce the heat to low and cook for 3 minutes, stirring occasionally.
Reduce the heat to very low and add the cold butter to the lemon juice. Keep stirring, allowing the butter to melt slowly. Cook for 1 more minute and remove from the heat.
