Burrata is more than just fresh mozzarella cheese. It is a handmade Italian mozzarella cheese ball stuffed with a thick Italian cream almost like the Iraqi geemar. It is a delight. So for such an exquisite ingredient, simple presentation and top quality ingredients are key. The tomatoes in the picture truly are that red, as they are organic Italian baby plum tomatoes.
It is the balsamic reduction and extra virgin olive oil that bring it all together. You can buy balsamic glaze, or just make it at home by reducing balsamic vinegar. Make sure it has cooled before use.
Ingredients: serves 1
1 burrata
3-4 mini plum tomatoes
1 Tbsp balsamic reduction
2 Tbsp olive oil
salt
Method:
Thinly slice the tomatoes and lay on serving dish.
Place the burrata over the tomato.
Drizzle with balsamic reduction and olive oil; season with salt.
Serve immediately.
