1438. Zaatar Feta Sunny Eggs


Eggs are like chicken. Well, granted they come from chicken, or they make a chicken, but that's not what I mean. Eggs are like chicken in the sense that there are a million and one ways to cook them, flavor them, and consume them, making them new every time. This is a new favorite weekend breakfast, giving a tangy spin to regular sunny side up eggs (spoiler: outrageous zaatar crust involved).
The secret of the flavor in in the two tangy additions of zaatar and feta cheese. Eggs are cracked over a zaatar infused oil in the pan and cooked to liking. Upon serving, top the egg with as much or as little feta cheese as you like (lashings upon lashings highly recommended).


Ingredients: serves 1

1 Tbsp zaatar
2 Tbsp olive oil
2 eggs
salt
feta cheese
bread, to serve


Method:

Add the olive oil in the pan over medium heat. Sprinkle over it the zaatar and allow to infused for a couple of seconds. Crack the eggs on top. Cook eggs to personal preference (runny or set yolk), and season with salt. You can spoon the infused oil over the eggs as they cook.
Serve immediately sprinkled liberally with feta cheese and warm bread with a steaming cup of sweet tea on the side.
