1528. Kofta Potato Gratin


Ramadan Kareem!
This is a quick and delicious meal that is healthy and wholesome. Kofta patties are stacked in concentric circles with sliced potatoes and laid over a bed of rich pureed vegetables. A fragrant broth is poured over the whole thing before it is baked covered in the oven.
Kofta mix is easy enough to prepare, and highly customizable too. It is basically a minced meat mix with finely chopped vegetables (onion, tomato, and parsley are the usual suspects), and some spice. If you have a supermarket that sells this raw mixture ready, go for it by all means.



Ingredients:

1 tomato
1 onion
1/2 green pepper
1 green chili pepper
500g kofta mix (raw)
2 large potatoes
2 garlic cloves
1 chicken stock cube
1 tsp salt and pepper
1/2 tsp thyme
3 Tbsp olive oil



Method:

In a food processor, blitz the tomato, onion, green pepper, and green chili pepper until reduced to a watery puree. Pour it in a deep casserole dish about 9 inches wide.
Peel and slice the potatoes into circles about half a centimeter thin. Form patties from the kofta mix the same size as the potato slices, and about a centimeter thin. Stack in alterations the potato and kofta disks, and lay them on top of the pureed vegetables in a way that will show the stacking.
In a bowl, mix together in 1 cup hot water the stock cube, salt, pepper, the grated garlic, and the thyme.
Pour this over your stacked koftas. Drizzle the olive oil lastly.
Bake covered in a preheated 350F oven for 1 hour, then uncovered for another 30 minutes.
Serve hot with some rice.
