I realize that the sugar could have been mostly eliminated here, but this is a treat, using a healthy base of ingredients, so just go with it. Strawberries are macerated for 15 minutes to draw out their juices and make a syrup. This is then distributed in single-serve glasses and topped with honeyed greek yogurt. The crowning jewel is the bashed minted sugar, lending a floral taste to the whole thing.
Ingredients:
2 cups fresh strawberry
1 1/2 cups greek yogurt
1/2 cup sugar (plus 1 Tbsp)
1 Tbsp honey
1/4 cup fresh mint leaves
Method:
Mix the chopped strawberries and half a cup of sugar in a bowl. Let to sit for 15-20 minutes until a syrup has formed. Divide the strawberry and its syrup into four cups.
Stir the honey through the greek yogurt, and divide over the four glasses of strawberry. Bash or blitz the mint and a tablespoon of sugar and top each glass with a teaspoonful.
Serve chilled.
