Refrigerator cakes are basically no-bake desserts that are assembled and left to set overnight in the fridge. In Arabic, we skip the complication and just call it sweet. So this is a layered biscuit sweet with a distinct honey flavor.
I used digestive biscuit which I think works very well, but feel free to use plain tea biscuits or even lotus biscuits. The recipe below makes a relatively small amount (perfect fit in a 7-inch deep square dish), but this is a heavy dessert. Multiply ingredients as necessary for larger serving.
Ingredients:
200g cream cheese
1 can thick cream (1/2 cup)
1/2 can sweet condensed milk
1 Tbsp honey
250g digestive biscuit
Method:
Process the biscuits to a fine crumb; set aside.
In a blender, blend the cream cheese, cream, sweet condensed milk, and the honey until well incorporated. It should be pourable.
Using a deep 7-inch square dish, layer the biscuits and the cream (starting and ending with the biscuits crumbs) into about 3-4 cream layers. Refrigerate overnight before serving.
