Turkey reminds me in so many ways of my beloved Iraq. This is one such instance, where their fast food is as wholesome and nutritious as can be. None of that bloating addictive junk spread around the world by America. Simit bread is sold for almost nothing in the streets of Istanbul, and in this case it serves as the sandwich base for some fresh feta cheese, ripe tomatoes, and vibrant mint leaves.This is usually served for breakfast, or as part of a breakfast, but there is no hard rule preventing anyone from enjoying it as an afternoon snack or even for a light dinner.
Ingredients:
1 simit bread
olive oil
feta cheese
ripe tomato
mint leaves
Method:
Slice the simit horizontally to make a sandwich. Drizzle some olive oil over the inside, layer with the cheese, tomato, and mint leaves.
Cap the sandwich and slice in half. Serve immediately.
