1551. Zaatar Haloomi Pancakes


This is a savory Cypriot pancake bursting with Mediterranean and Turkish flavors. There is haloomi cheese in there, as is some olives, dried mint, and my personal touch of fresh zaatar leaves (optional but good). Here is the true kicker: serve drizzled with lashings of honey for an unbeatable combination.
The recipe yields a modest four pancakes, so manage expectations properly here depending on how many you plan to serve.



Ingredients:

1 large egg
1 mug milk
1 mug flour
1 Tbsp dry mint
1 Tbsp icing sugar
100g finely grated haloomi cheese
1/4 cup chopped black olives
2 Tbsp chopped fresh coriander
1/2 cup fresh zaatar leaves (optional)
sprinkle of sesame and nigella seeds
honey, to serve




Method:

In a bowl, whisk together the egg, milk, and flour. Add the rest of the ingredients and whisk well.
Wipe a pre-heating on medium heat non-stick pan with a little oil and pour in a ladleful and a half of the batter. Swirl to cover evenly the bottom of the pan. Sprinkle lightly with the sesame and nigella seeds.
Allow to cook until the sides and bottom have browned before flipping over to cook the top side until that is browned as well.
Serve warm with drizzles of honey.
