The sky is the limit since I discovered excellent quality ready made raw kofta in the supermarket. Not that it is difficult to make, just saves a lot of time chopping and handling. This lemony kofta bake became an instant favorite, and the nostalgia of home-fried potatoes hit hard.
We like it saucy and tangy, so upped the lemon juice to a whole cup. If you're moderate, just use half a cup of lemon juice. An almost five ingredient masterpiece.
Ingredients:
1.5 kg raw kofta mix
2 onions
4 large potatoes
8 cloves garlic
2 tsp salt
1 cup lemon juice
1/4 cup olive oil
1/2 cup water
Method:
Form short rods from the kofta mix and place in single layer in a large oven dish, add a sliced onion on top & semi bake at 350F for approximately 20 minutes.
In the meantime season potatoes with salt & also semi fry/airfry the potatoes.
Crush the garlic with salt in a mortar & pestle, add the garlic to a jug with the lemon juice, olive oil, and water, whisk well.
Add the potatoes to the kofta, pour the sauce over the top, give it a gentle mix & return back to the oven for another 25 to 30 minutes, uncovered.
Garnish with parsley & serve with rice.
