This is a family Lebanese classic lunch made express by using minced meat. Perfectly sour, this stew is very flavorsome and pairs lovingly with some vermicelli rice.
If you are using fresh spinach, be sure to wash it plenty as it tends to hold a lot of grit. I used frozen chopped spinach for added convenience. Recipe from a fantastic and generous instagram account, Mama G.
Ingredients:
450g frozen chopped spinach
500g lamb or beef mince
1 onion, diced
6 cloves garlic, grated
1 bunch finely chopped coriander
1 tsp 7 spice
Juice of 4 large lemons or to taste
1/2 cup toasted pine nuts, to serve
Salt
Method:
Brown the mince and onion in a pot, cooking for about 15 minutes until the onions are soft. Add garlic & coriander, cook for a minute more. Add the frozen spinach, salt and 7spice. Cover & cook on low for about 15 minutes. Check for juices, if you like you can add a little water. Towards the end of cooking throw in your pine nuts. Add the lemon at the end of cooking & taste for seasoning. Serve with vermicelli rice.
