1674. Bee Pollen Granola


Bee pollen has a wide range of amazing health benefits. Downside is that it may taste a bit like what I imaging chalk to taste like, so eating it by the spoonful is ruled out. Incorporating it as an ingredients in this granola seems like the perfect solution. Caution: bee pollen loses much of its nutritional value upon heating, so add it to the granola once out of the oven to minimize this loss. 
Consume as you would an granola: over some greek yogurt, with fresh fruits.


Ingredients:

3 cups oats
1 cup pumpkin seeds, shelled
1/4 cup flax seeds
1/4 cup chia seeds
1/2 cup honey
1/4 cup olive oil
1/2 tsp salt
1/2 cup bee pollen



Method:

In a large mixing bowl, combine the oats, chia seeds, pumpkin seeds and flax seeds.
In a second bowl, whisk together honey, olive oil and salt. They will combine easier if you heat them in the microwave 15-30 seconds.
Drizzle the liquid mixture over the dry ingredients and gently toss/stir until evenly coated.
Spread out onto a large baking sheet and bake at 325F for 18-20 minutes, stirring once halfway through baking for even toasting.
Remove from the oven and sprinkle evenly with the bee pollen. Let cool completely and store in an airtight container at room temperature.
Serve over natural yogurt topped with fresh fruits of choice and a drizzle of runny honey.
