We love our rice crispy treats here at the MCW household. Perfectly shaped with just the right amount of softness and marshmallow pull, combined with a secret ingredient making it irresistible. But this is a cousin of that beloved beast, totally unique in its own right, and uses only five ingredients.
Cornflakes held together with molten marshmallows are cut into bars, dunked in melted chocolate, topped with a fresh raspberry, and put aside to set into the most marvelous treat.
Ingredients:
50g butter
2 cups mini marshmallows
5 cups cornflakes
300g milk chocolate
a handful fresh raspberries
Method:
Over low heat, combine the marshmallows and butter, stirring often until completely molten.
Off heat, stir in the cornflakes, ensuring to stir thoroughly to combine.
Invert the mass into a baking paper lined square 8"-8" pyrex dish and flatten with the back of a spoon or gloved hands. Refrigerate 2 hours.
Cut the slab into bars of desired size, and dip in melted chocolate and top with a fresh raspberry. Place on the same baking paper (transferred to a tray) and refrigerate until solid.
Serve at room temperature.
