It’s the perfect balance of fresh, zesty flavours with a beautiful kick from the salty capers. One bite and this will be in your permanent rotation.
Ingredients: serves 2
2 fillets of fish
4 Tbsp butter
Juice of 1 lemon
2 Tbsp capers
salt and pepper
Sides:
Any greens, any style of potatoes, cauliflower mash, rice, couscous, crusty bread, whatever you fancy. (This time I used left-over mash & very briefly steamed veg.)
Method:
On a low-medium heat melt half the butter. Add fish fillets and season with salt and black pepper. Cook on one side for 3-4mins. Meanwhile squeeze over the juice of one lemon.
Add the capers. After about 4mins, flip the fish. Add the rest of the butter and cook for another 3-4 mins, or until fish is cooked right through.
Serve immediately, spoon over all of that lovely buttery sauce with sides of choice.
