1678. Walnut Flour Maamoul


Meet my new favorite maamoul: the walnut flour maamoul. Just in time for Eid. 
Perfect consistency of melt-in-your-mouth, these maamoul cannot be beat. 



Ingredients:

7 cups flour
1 tsp kaak spice
500g butter, melted
1 cup sugar
3/4 cup water
1/4 cup powder milk

For the walnut filling:
2 cups walnuts, toasted
1 cup sugar
1 tsp powdered cardamom
2-3 Tbsp rosewater



Method:

Using your hands of a stand mixer, rub together the flour, kaak spice, and melted butter until the flour drinks up all the butter and it is evenly distributed.
In a beaker, stir together the sugar, water, and powdered milk. Pour over the saturated flour mixture and knead until a dough forms. The dough might be too soft to work with, so cover and set aside for a couple of hours if this is the case.
To make the filling, blitz all filling ingredients to a rough chop in the food processor.
When the dough is easily shaped, take out ping pong-sized portions and fill with the ready filling. Seal and shape using molds.
Bake in a preheated 350F oven for 12 minutes, until golden at the bottom but still white at the top.
Remove from the oven, sprinkle liberally with powdered sugar, and leave to cool completely on the baking sheet.
