These zaatar leaf buns are more like scones than buns. Freshly out of the oven split in half, and smeared in salted butter is the best way to go.
They can furthermore be served at breakfast with some cheese or lebna balls. Note that the recipe uses dried zaatar leaves, and not the typical zaatar mix.
Ingredients:
1 Tbsp sugar
1 Tbsp instant yeast
2 cups flour
1 cup water
1 cup milk
2 cups flour, extra
1/2 cup olive oil
2 tsp salt
1 cup dried zaatar leaves
2 cups grated naplussi cheese
Method:
Mix: sugar, yeast, 2 cups flour, water, and milk well. Set aside for 10 minutes.
Add the remaining two cups flour, olive oil, salt, and knead for about 8 minutes.
Add the zaatar leaves and grated naplussi cheese; knead two minutes more to incorporate. Cover and let rest 1 hour.
Divide into bus. At this point you can choose to make plain, or stuff with a mozzarella-feta mixture.
Brush with extra olive oil and bake in preheated 350F oven for 10-12 minutes.
