1691. Extraordinary Haloumi Sandwich


If I had the will to make this every morning, I would. For not, this extraordinary halloumi sandwich is reserved as a special weekend breakfast. The recipe makes enough for two very generous portioned sandwiches. 
An ultra-speedy olive pesto is made, and speared on one toasted toast. An even speedier zaatar-lebna mix is the smeared on another toast. Grill or lightly fry up halloumi cheese and thick tomato slices and add. Throw in as much rocket as the sandwich can handle, seal and consume.


Ingredients:

For the olive pesto:
1/2 cup pitted black olives
4 walnut halves
2 Tbsp olive oil

For the lebna:
1/2 cup lebna
1 Tbsp olive oil
2 tsp zaatar

For the sandwich:
4 slices toast, toasted
1 block haloomi (200g)
4 slices tomato, thick
2 handfuls rocket leaves




Method:

Make the olive pesto: blend ½ cup black olives, walnut, olive oil, and a grinding of fresh pepper.
Make the lebna: Mix the lebna, olive oil and zaatar.
Cut block of haloomi lengthwise in half, like a book. Saute haloomi slices and tomato slices.
Toast 4 slices of bread.
Assemble 2 sandwiches: bread, lebna, haloomi, tomato, jerjir, olive paste, toast.
