Basically, homemade chicken nuggets shaped as a donut. Made using 100% chicken breasts, you will not find it made from a discarded chicken carcass as you would in industrially manufactured chicken nuggets.
Further flavor enhancements come from the spices, an essential mega-dose of freshly grated lemon zest, and addition of cheddar cheese. Perfect dipped in ranch sauce.
Ingredients:
500g chicken breasts
1 large green chili
1/4 cup breadcrumbs
2 lemon, grated zest only
1 tsp paprika
1 tsp salt & pepper
1 tsp onion powder
1/2 tsp garlic powder
1 tsp dried basil
1/2 cup grated cheddar
For the breading:
2 eggs
1.5 cups panko breadcrumbs
oil to fry
Method:
Combine the roughly chopped chicken breasts and chili in a food processor with the breadcrumbs, lemon zest, paprika, salt, pepper, onion powder, garlic powder, dried basil, and grated cheddar. Pulverize until a dough is formed.
Shape the dough into 15 chicken donuts. Coat each donut in the beaten eggs then in the breadcrumbs.
Fry in oil until golden on both sides and cooked through. Serve with a side of ranch.
