Another overnight oat recipe is probably not what this blog needs, but this was just too go not to share. Instead of jam, frozen blueberries are cooked down, sweetened with some honey, and thickened with chia seeds.
The combination of sweet blueberries with fresh lemon zest is a wonderful combination that has this breakfast tasting like dessert.
1 cup porridge oats
1 cup milk
3 heaped Tbsp greek yoghurt
Small pinch salt
1 tsp lemon zest
4 Tbsp fresh lemon juice
2 Tbsp honey
For the blueberry chia jam:
300g blueberries
Squeeze of lemon
2 Tbsp chia seeds
2 Tbsp honey
Method:
Make the overnight oats by stirring everything together in a big bowl - taste test and add more honey or lemon to your taste - then cover and leave to set refrigerated for 2 hours (or overnight).
Make the jam by adding the blueberries to a pan over a low heat, along with the lemon juice. Squish the blueberries down with a masher or back if a fork. Let it simmer for 5-10 minutes until the juices have released and it’s gone a rich purple colour. Take off the heat and stir in the chia seeds and honey and let it set into a thicker jam texture. You can store this in a jar in the fridge for up to a week.
