This is a healthy and nutritious way to start the day whether breakfast of suhur: layers of whole grain soaked in milk, topped with protein-rich greek yogurt, and a final touch of fruit cooked down and thickened with chia seeds and sweetened with honey.
It is best to make a tupperware of this and refrigerate it to consume throughout the week.
Ingredients: Serves 2
4 wheetabix sticks
3/4 cup milk
1 cup greek yogurt
1 1/2 cups blueberries, fresh or frozen
1/3 cup maple syrup or honey
2 Tbsp chia seeds
Method:
Crush wheetabix biscuits in the container. Add milk and flatten the wheetabix base with a back of a spoon until smooth. Spread the yogurt on top.
Heat a medium saucepan over medium heat and add in blueberries and maple syrup or honey. Once the berries have softened and released their juices, add the chia seeds and stir well.
Let the mixture cool down slightly, then spread over the yogurt layer and make a swirl.
Close the container and store in the refrigerator overnight. Enjoy the next morning.
