This is a nice change to the typical salad: it is very chunky with the pomegranate and walnut, and the only "leaf" element is the chopped parsley.
The crumbled feta adds a very distinctive touch and rounds up all the flavors, so be sure not to skip it.
Ingredients:
1 bunch parsley
1 1/2 cups pomegranate arils
1 cup cherry tomato
1 1/2 cups roasted walnuts
200g crumbled feta cheese
Salad Dressing:
4 Tbsp olive oil
2 Tbsp pomegranate molasses
2 tsp lemon Juice
2 tsp apple vinegar
Salt
Method:
In a bowl, combine the chopped parsley, pomegranate arils, roughly chopped roasted walnut, and the crumbled feta cheese. To make the dressing, combine all the ingredients in a jar and shake well. Dress the salad just before consumption.
