1875. Mushallal Cheese Sandwich


I have a soft spot for forgotten traditional Arabian fast food. We have such a negative connotation with the term fast food because the west completely mutilated it with their harmful versions. However, the traditional Arab fast foods are so wholesome and actually healthy and beneficial for the body. 
This quick sandwich uses mushallal cheese, a distinctly Arab cheese that is studded with nigella seeds. However, any salty melty cheese would do. After grilling the sandwich in a pan, it is pried open and stuffed with fresh tomato slices and rocket leaves. Now this is the definition of Arabian fast food.




Ingredients:

Lebenese Bread
Shallal Cheese
Olives
Dried Mint
Olive Oil
Arugula
Tomato



Method:

Open the Lebanese bread at the seams to end up with two circle halves. Each half will make a sandwich. Over each half, place the shreds of mushallal cheese and stud it with pitted olive halves or slices and a light sprinkle of dried mint. Fold the sandwich in half over the contents and brush the exterior with olive oil. Grill in a medium hot pan until crispy on the outside and melty on the inside. Stuff with fresh tomato slices and rocket/arugula leaves just before consuming.
