1891. Simple Chicken Cream Pasta


The other day I had six hungry people to feed and I wanted a quick and simple yet delicious pasta. I did a quick search online but nothing was simple enough to make with the basic ingredients I had, so I improvised. 
The resulting dish turned out to be something worth sharing, and might be my go-to pasta dish.



Ingredients: serves 8

1 kg chicken breast
2 tsp paprika
salt and pepper
6 garlic cloves
olive oil
450g dried pasta
1 litre cream
2 cups freshly grated parmesan
chopped parsley, to serve




Method:

Cut the chicken into bite-sized pieces and toss with the paprika, salt, and pepper in a bowl. 
Boil the pasta until aldente.
While the pasta is boiling, heat some olive oil over medium high heat and sear the spiced chicken. When seared on all sides, add the grated garlic and saute for a minute longer until fragrant. Add the cream and lover heat to medium low. Let it sustain a light simmer as the pasta finishes cooking.
When the pasta is aldente, strain and add to the cream mixture, cooking it about 7 minutes more until the pasta is fully cooked and the sauce has thickened. Stir in the grated parmesan and serve with some chopped parsley and extra grated parmesan.
